We welcome you to visit our distillery and explore our innovative small-batch spirits. During your visit you can enjoy a tasting flight of our classic and seasonal spirits, including our flagship Big Sur Gin as well as a variety of whiskies, rums, and liqueurs. Every spirit we offer is made by hand here in Paso Robles with local ingredients and dedication to craftsmanship. We also feature our spirits in fresh artisan cocktails, available for take-out or to enjoy in our lounge.

Tour the Distillery

Guided Tasting $30/person

(6 person minimum)

Behind-the-scenes tour of the Calwise distillery, including a talk on the history of alcohol, the beginnings of Calwise Spirits Co., and an explanation on the science behind fermentation, distillation, and aging. Includes a guided spirits tasting, with a walk through of proper spirits tasting techniques and tasting notes.
